Instant Pot Coq au Vin Recipe
Ingredients:
– 4 chicken leg quarters (drumstick and thigh)
– 8 slices of thick-cut bacon, chopped
– 1 large onion, finely chopped
– 4 cloves garlic, minced
– 1 cup red wine
– 1 cup chicken broth
– 2 tablespoons tomato paste
– 2 tablespoons all-purpose flour
– 1 tablespoon olive oil
– 1 teaspoon dried thyme
– 2 bay leaves
– Salt and pepper to taste
– Chopped fresh parsley for garnish
Instructions:
1. Prepare Chicken: Season chicken leg quarters with salt and pepper. Set the Instant Pot to “Sauté” mode and add olive oil. Brown the chicken on all sides, working in batches if necessary. Remove chicken and set aside.
2. Sauté Bacon and Aromatics: In the same Instant Pot, add chopped bacon and sauté until crispy. Add chopped onions and garlic, cooking until softened.
3. Deglaze Pot: Sprinkle flour over the bacon and onion mixture. Stir well to combine. Pour in red wine, scraping the bottom of the pot to deglaze it. Allow the wine to simmer for a few minutes.
4. Add Chicken and Remaining Ingredients: Return the browned chicken to the Instant Pot. Add chicken broth, tomato paste, dried thyme, and bay leaves. Stir to combine all ingredients.
5. Pressure Cook: Close the Instant Pot lid and set it to “Manual” or “Pressure Cook” mode for 20 minutes. Ensure the steam release valve is sealed.
6. Natural Release: Once the cooking time is complete, allow the pressure to release naturally for about 10 minutes. Then, carefully release any remaining pressure.
7. Serve: Discard bay leaves and transfer chicken to a serving dish. Garnish with chopped fresh parsley.
8. Optional: Thicken Sauce: If you prefer a thicker sauce, set the Instant Pot to “Sauté” mode and simmer the sauce until it reaches your desired consistency.
Serve Coq au Vin over mashed potatoes, pasta, or crusty bread to soak up the delicious sauce.
