Traditionally authentic Peruvian ceviche is served as an appetizer. But you should serve it however you like. Enjoy.
Ingredients:
- 1 lb fresh white fish (such as sea bass or flounder), cut into small cubes
- 1 cup fresh lime juice
- 1 red onion, thinly sliced
- 1-2 hot peppers (aji amarillo or aji limo), finely chopped (jalepeno or serrano will work in a pinch)
- 1-2 cloves garlic, minced
- 1 bunch cilantro, finely chopped
- Salt and pepper to taste
- Corn on the cob, boiled and sliced (optional)
- Sweet potato, boiled and sliced (optional)
Instructions:
- Place the fish cubes in a bowl and cover them with lime juice. Let it marinate in the refrigerator for about 15-20 minutes until the fish turns opaque.
- Drain excess lime juice from the fish. Add red onion, hot peppers, garlic, and cilantro to the fish.
- Season with salt and pepper to taste. Mix everything well.
- Serve the ceviche chilled, and if desired, accompany it with boiled corn on the cob and sliced sweet potato.
